Mulberry Muffins

Not once in our three-month marriage had I made muffins- until Hubs had to leave for a job at 4:30 am the other day. I decided to make him something a little more road-friendly (albeit less healthy) than fried eggs or granola. Using free/foraged fruit for an original 'blueberry' muffin recipe literally cut the cost in half. I sent all but one of the muffins with Hubs. Otherwise I would eat them ALL! And give myself a muffin top.

Mulberry Muffins

Cost per recipe: $1.99

Ingredients:
3 cups flour
4 tsp. baking powder
1 tsp. salt
1/2 cup butter
1 cup sugar
2 eggs
1 cup of milk
1 tsp. vanilla extract
1 1/2 cup mulberries

Instructions: Preheat oven to 400 degrees F. Mix first four dry ingredients in a bowl and set aside. In a different bowl, combine butter, sugar, eggs, milk, and vanilla. Add dry ingredients to the wet ingredients. Lastly, add the mulberries. To avoid crushing the berries, use a spatula to gently incorporate them into the batter. Use muffin/cupcake liners or spray the muffin tin to make cleanup easier.

Lastly- don't eat them ALL! Give some away to friends or dole out to hungry children.
